Winter Salad

I’ve never been one to do anything dramatic with my post-holiday diet. Sure, I don’t consume quite as many cookies/gingerbread/eggnog, but there’s nothing sadder than coming down from the buzz of the season and then restricting yourself to green juices. It’s all about the balance, so if we’re having something heavy, I like to finish off the meal with a flavorful salad. This one, with two types of kale, fresh citrus (grapefruit and orange), pomegranate seeds, parmesan cheese, and a tarragon-champagne vinaigrette has been on heavy rotation. Plus, even after it’s been dressed, it’ll last in the fridge for a couple of days and provides a nice base for leftovers, which often includes roasted vegetables or some grilled chicken.
