The Best Things Our Team Made in the Kitchen in May

We spend a lot of time in our kitchens, and our team even has a Slack channel dedicated to sharing the best recipes we’ve tried and loved. So it only felt right to put the top contenders from May together – hopefully at a bare minimum, they inspire you to try out something new this month.

Molly Baz’s Piri-Piri(ish) Chicken with Crushed Potatoes & Aioli

I’ve been steadily making my way through Molly Baz’s Cook This Book, with a lot of success and very few duds. I spotted this chicken recipe before heading out on a farmers market run and opted to try it because 1. prep looked easy and 2. it requires few ingredients outside of pantry staples we already had at home. And friends…HOLY MOLY. She might not be pretty, but I wound up tasting a piece of dark meat right after it came out of the oven, then proceeded to devour the entire drumstick within a minute. The flavors are out-of-this-world and the chicken comes out incredibly succulent – making it perfect for leftovers, too!

Sally’s Baking Addiction Lemon Bars with Shortbread Crust

Sometimes you need a quick-and-easy recipe to throw together on a Friday evening when you’re craving something sweet (and a little sour) – and these lemon bars were speaking to me. They felt seasonal and with only seven ingredients required, they’ll be my go-to for any summer potlucks.

Eggs Over Medium with Fried Garlic, Sautéed Mushrooms, Avocado, and Chili Crisp

This is less of a strict recipe and more of a recommendation to get creative with your eggs for lunch for anyone feeling uninspired in the kitchen. Due to circumstances (aka a lack of grocery shopping), I was working with limited inventory in my fridge, and opted to throw together a hearty and satisfying egg dish featuring two eggs over medium (my favorite preparation), some fried garlic, a few sautéed mushrooms, a quarter of an avocado, and my not-so-secret weapon, Fly By Jing’s Chili Crisp. The results were worthy of repeating. It also would have been especially delicious over a steaming cup of rice!

Crayons and Cravings Patriotic Berry Trifle

I make some variation of this trifle on any special occasion that celebrates my mom – it’s her all-time favorite dessert. The layers of Nilla Wafers, vanilla pudding, Cool Whip, and fresh berries also make quite the crowd pleaser at Fourth of July barbecues, so while I didn’t have a picture fully featuring it from Mother’s Day this year, I felt compelled to share it. Luckily, it’s one of the easier dishes to throw together, and tastes like summer in a dish.

Shrimp and Broccoli Stir Fry

I call this one “let’s throw the random groceries you can find together for lunch.” I’ll admit that I haven’t gone grocery shopping in a minute, but luckily I always have some form of noodles in my pantry, a vegetable, and frozen meat or fish. I love any and all stir fry, so when I found frozen shrimp, noodles, and broccoli, I knew that was the answer — I threw ’em together on a pan full of spices and soy sauce. It might not look or sound super impressive (and there may not be an official recipe), but as someone who doesn’t cook too often, I was impressed with the results of this quick meal I threw together before our 2 PM team call. *chefs kiss*
