
I love nachos in pretty much any form. Whether it’s the fake-cheese variety they sell at movie theaters, or the (equally fake), fully loaded trough you get at a baseball game, I don’t discriminate. Recently, I met up with a friend at our favorite Mexican dive, where I always get the same taco combo plate. She suggested we try their nachos, which were nothing short of life changing. They were so incredible that I decided to recreate the dish at home. I did some research first and learned a few invaluable tips: always line your baking sheet with tin foil (makes clean-up a breeze), create multiple layers (i.e. beans, cheese, meat, more cheese), and finish with a variety of toppings, like fresh lime juice, salsa, crema, and jalapenos. We had them for dinner, which was such a treat, and while they won’t become a weeknight staple, it’s nice to know that I can make a comparable dish at home with only a few simple ingredients.
