
I enjoy a classic potato salad, but let’s be honest; it’s not the most exciting side dish. After seeing some great varieties across Pinterest, I wanted to up our game and decided to go the heirloom route (recipe), while taking advantage of our overgrown kumquat trees for the dressing. We added in some radishes, roasted fennel and bacon to provide a little more depth of flavor and the final result has earned a new place in our summer picnic rotation.
