Cheese Puffs

Most times when we entertain, I’ll throw together a cheese plate. But, when I’m feeling particularly ambitious (and when we’ve done something really simple for the main course), I like to make little home-baked bites to kick off the meal. I had these cheese puffs at a friend’s house a while back and they felt like such an indulgent and slightly old-school thing to serve. They’re impossibly light and cheesy and come together really quickly. Plus, you can bake them ahead of time, let them cool and pop them in the freezer so that the next time you entertain, you’ll look like you went to a lot more effort than you actually did.
